This recipe uses sweetened dried cranberries, so it’s not the lowest in sugar. But this meal has almost 38% of the recommended calcium and 84% of the recommended Vitamin A.


Ingredients
- 2 tbsp tahini spread
- 1/4 cup cranberry
- 1 tbsp orange rind
- 1 Egg
- 1/2 cup cottage cheese
- 2 tbsp Xylitol
Instructions
Using a mug, beat together the tahini, cottage cheese, egg, and xylitol. You can use a fork to make it mostly smooth, though it will be hard to tell wth the cottage cheese curds. (you can also blend separately and pour the mixture into the mug).
Once beaten, add in the cranberries and orange rind (fresh or dried) and blend those thoroughly.
Place the mug in the microwave and cook for 3-5 minutes based on your microwave. Feel free to use a toothpick to see if the center of the cup is still gooey batter as you test out the perfect time. Mine runs hot, so 3.5 mins is perfect for a moist center.
